  • 1/2 small onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup shredded cheese (cheddar, feta, or your choice)
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter
  • Fresh herbs for garnish (like parsley or chives)

Instructions:

  1. Prepare the Eggs: In a bowl, whisk together the eggs, milk (if using), salt, and pepper until well combined.
  2. Sauté the Vegetables: In a non-stick skillet, heat the olive oil or butter over medium heat. Add the diced onion and bell pepper, cooking for about 3-4 minutes until they begin to soften. Add the cherry tomatoes and spinach, cooking for another 2 minutes until the spinach wilts.
