Ingredients:
- 4 large eggs
- 1/4 cup milk (optional, for creaminess)
- 1 cup fresh spinach, chopped
- 1/2 bell pepper, diced (any color)
- 1/2 small onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup shredded cheese (cheddar, feta, or your choice)
- Salt and pepper to taste
- 1 tablespoon olive oil or butter
- Fresh herbs for garnish (like parsley or chives)
Instructions:
- Prepare the Eggs: In a bowl, whisk together the eggs, milk (if using), salt, and pepper until well combined.
- Sauté the Vegetables: In a non-stick skillet, heat the olive oil or butter over medium heat. Add the diced onion and bell pepper, cooking for about 3-4 minutes until they begin to soften. Add the cherry tomatoes and spinach, cooking for another 2 minutes until the spinach wilts.
