The perfect recipe for nights that you don't want to fire up the grill, and my personal favorite way to cook a steak. It creates so much flavor and locks in the moisture profile every time! They smell delicious, but make sure you let them rest the full 5-10 minutes to ensure a moist, delicious steak every time.
Pro tip: heat your dinner plates up and let the steak rest on a warmed plate so it stays hot!

Pan-Fried Steaks Recipe
Ingredients:
- 2 ribeye or sirloin steaks (about 1-inch thick)
- Salt and pepper to taste
- 2 tablespoons olive oil or vegetable oil
- 2 tablespoons butter
- 3 cloves garlic, smashed (optional)
- Fresh herbs (like thyme or rosemary) for flavor (optional)
Instructions:
- Prepare the Steaks: Remove the steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature. Pat them dry with paper towels, then season generously with salt and pepper on both sides.
- Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.
- Sear the Steaks: Add the steaks to the hot pan. Cook for about 4-5 minutes without moving them to achieve a nice sear. Flip the steaks and cook for another 4-5 minutes for medium-rare, or until they reach your desired doneness. Use a meat thermometer for accuracy (medium-rare: 130°F/54°C).
- Add Butter and Aromatics: During the last minute of cooking, add the butter, smashed garlic, and herbs (if using) to the pan. Tilt the pan slightly and use a spoon to baste the melted butter over the steaks for added flavor.
- Rest the Steaks: Once cooked, transfer the steaks to a plate and let them rest for 5-10 minutes. This allows the juices to redistribute for a juicier steak.
- Serve: Slice against the grain and serve with your favorite sides, such as mashed potatoes, steamed vegetables, or a fresh salad.
